Mozzarella and Pea Quinoa

I classify this dish as a comfort dish… as well as a fresh, healthy and delicious dish! This quinoa dish highlights peas, which are in season in the springtime, and takes on a creamy texture and flavor from the mozzarella. This is the perfect dish to make when you are running low on ingredients or when you just want to make a quick and easy lunch!

I love quinoa on its own, however I know many people would agree quinoa needs a little bit of help for it to taste good. If you don’t like quinoa, I have a feeling this recipe will change your mind! The onion and peas add a present sweetness and the cheese adds creaminess and a good saltiness.

Benefits of Quinoa

Quinoa offers us so many beneficial vitamins, iron, fiber and it’s a great source of protein! It’s a perfect addition to your diet. My goal is to include quinoa in my diet at least once a week – twice is even better.

For Littles

I have a feeling your little one will LOVE this dish… my little one sure does: she eats the whole bowl every time I serve it to her. I love to give this to her for lunch. It’s one of my favorites to eat with her as well.

Quinoa is a great choice of grain to serve to your littles. The health benefits of quinoa will help give your little one the best start possible!

I would serve this 7 months+!
