This broccoli cheddar quinoa is one way I know my toddler will eat her broccoli. This 4-ingredient quinoa has a creamy taste and soft texture that’s hard to resist. The finely chopped broccoli fuses perfectly with the quinoa and creates the perfect bite! Willow finishes her bowl every single time I serve this to her, and so do I! Not only is it delicious, but I know we are getting important fiber, protein and antioxidants. I will make this for a quick lunch or easy dinner. I hope you love this as much as my family and I do!

Benefits of Quinoa and Broccoli

Quinoa is a full of fiber and protein, which is vital when building a healthy digestive system. Broccoli is also full of fiber and antioxidants and supports our immune systems.

For Littles

This is a perfect meal to serve to your toddler as not only is it tasty, but it’s incredibly healthy for your growing little one. It’s also super easy to eat. You can serve this to your littles 7 months +!

How To

Start off by cooking your quinoa and broccoli. Then chop up the broccoli finely.

Once your quinoa is finished cooking, throw in your broccoli, cheese, butter, salt and pepper in the same pot with the quinoa. Put it over low heat and cover for a minute or two, until the butter and cheese have melted.

Stir and serve warm!

Ingredients

  • 1 1/2 cups cooked quinoa (1/2 cup uncooked quinoa)

  • 1 cup cooked finely chopped broccoli

  • 3/4 cup shredded cheddar cheese

  • 1 tablespoon butter

  • 3/4 teaspoon salt

  • 1/8 teaspoon black pepper

Directions

  • Cook your quinoa according to the package directions. Make sure you wash your quinoa before cooking! I put mine in a strainer and rinse beforehand.
  • Cook your broccoli! When I steam my broccoli, I like to put the broccoli and a 1/2 tablespoon of water in a microwave safe bowl, put plastic wrap over it and poke a couple holes in the plastic wrap with a knife. Then I put it in the microwave and cook it for 1 minute and 30 seconds (see pictures above).
  • When the quinoa is finished, in the same pot the quinoa was cooked in, put in your finely chopped broccoli, cheese, butter, salt and pepper.
  • Put the pot back on the burner over low heat and cover. Let the cheese and butter melt for a minute or two and stir. Quickly move the quinoa to a bowl so the quinoa doesn’t cook anymore in the pot.
  • Serve warm! You can store in an airtight container in the fridge for up to 3 days. Enjoy!:)
