This pasta sauce is creamy, nutritious and addicting. The avocado and cauliflower together create that perfect texture and taste of a thick, delicious sauce! It’s perfect for a family meal, and babies and kids of all ages will gobble this up! It also takes seconds to make which is a plus.

I feel like spring is the time to get into making green pasta sauces. Not only are green sauces gorgeous to look at, but you know you’re about to eat something incredibly good for you. The avocado adds a wonderful creaminess and a healthy fat. The cauliflower serves as a great texture to combine with the avocado and offers many essential vitamins including vitamin C, K and folate! It’s quick to make, too; you just add everything into a blender and blend it up. I hope you love this recipe as much as we do!

Ingredients

You will need Cauliflower, Avocado, Olive Oil, Pasta Water – if you cooked the pasta in advance, you can still save some. If you forgot, filtered water will work fine, Salt, Pepper and Pasta of Your Choice.

For Littles

This pasta sauce one of the best sauce recipes for babies and toddlers! The color is fun to put on a little one’s plate, and it’s a great way to sneak some veggies into your little one’s diet. You can serve this to babies 6 months+! If you are worried about the size of the pasta, cut the pasta up or prepare using a smaller pasta noodle.

If you are making just for you and your little, you can halve this recipe easily.

How To

Blend all the ingredients in a blender.

Mix together the pasta and sauce! Serve warm.

Ingredients

  • 2 cups steamed cauliflower

  • 1 small ripe avocado

  • 2 tablespoons olive oil

  • 1/4 cup pasta water

  • 3/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/2 lb pasta of your choice

Directions

  • Start a big pot of salted water and start cooking your pasta according to the box directions while you make the sauce. Once the pasta is finished cooking, you can strain and put into a big bowl. Set aside!
  • In a blender or food processor, blend the cauliflower, avocado, olive oil, salt, pepper and water. You want it to be a thicker texture, but you can add more water if needed!
  • Spoon the sauce into the bowl of the pasta and combine the pasta and sauce using a rubber spatula.
  • Sprinkle some Parmesan cheese on top if desired and serve warm! You can save it for up to a day in the fridge. Enjoy!:)
