Healthy Blueberry First Birthday Smash Cake

This cake is the perfect first cake for your baby. Not only is it a healthier version of a birthday cake, but you would also never know it is a healthy version because it is so delicious! The yogurt and olive oil make the cake moist, the maple syrup adds a depth of flavor, and the blueberries add a pop of tartness!

My daughter is a May baby, and blueberries are in season in May. I love using in-season ingredients, so I knew I wanted to use blueberries in her birthday cake. This cake is so pretty- the frozen blueberries turn the cake batter into a pretty dark blue swirl!

I was so excited to do this cake smash with my daughter. She is my first baby, and I loved to watch her with her cute little cake! She absolutely loved it! Here are some pictures from her smash:

The cake was the perfect size for her and she of course made a cute mess.. got it on her feet even! So fun.

Ingredients for a Healthier Cake

I wanted something for Willow that wasn’t full of butter, white flour and sugar, but something so good that I would also eat for my birthday!

For the Cake:

Instead of white flour, I use whole wheat flour.

Instead of butter, I use 1/2 cup yogurt and 1/4 cup olive oil.

Instead of a cup of sugar, I use 1/2 cup of sugar and 1/4 cup maple syrup. If you don’t want any sugar, omit the sugar and do and do another 1/2 cup of maple syrup.

For the Frosting:

Instead of butter, I use cream cheese.

Instead of a bunch of sugar, I only use 1/3 cup powdered sugar and 1/4 cup maple syrup.

Cake Pans

I used some mini cake pans for her cake. These are the ones I purchased from amazon – Mini springform cake pans. If you do not have these, you can cut out some circles out of a 9×9 cake pan once you bake the cake!

How To

Combine the wet and the dry ingredients in separate bowls and then mix them together.

Fold in the blueberries… look at that beautiful color!

Spoon the batter into the cake pans and bake!

Make frosting while the cakes are cooling!

Cut even layers on the cake, and build the cake. Then frost it!

Ingredients

  • Cake
  • 1 1/2 cup whole wheat flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 cup yogurt

  • 1/4 cup olive oil

  • 1/2 cup sugar

  • 2 eggs

  • 1/4 cup maple syrup

  • 2 teaspoons vanilla extract

  • 1 cup frozen blueberries

  • Frosting
  • 8 oz softened cream cheese

  • 1/3 cup powdered sugar

  • 1/4 cup maple syrup

Directions

  • Make the Cake
  • Preheat your oven to 350 and grease your cake pans with olive oil
  • In a medium sized bowl, combine the flour, baking soda, baking powder and salt. Set aside.
  • In a big bowl, whisk together the, yogurt, olive oil, sugar, eggs, maple syrup and vanilla extract until combined.
  • Dump the dry ingredients into the bowl with the wet ingredients and mix until you can’t see any more flour.
    Pour in the blueberries and combine with a rubber spatula.
  • Divide the batter into the 3 cake pans evenly. Put in the oven for 35-40 minutes, until the toothpick comes out clean.
    Let them cool for an hour or two and then pop them out of the springform pans.
  • Make the Frosting
  • Using a hand mixer, mix together the softened cream cheese, powdered sugar and maple syrup until combined.
  • Assemble the Cake
  • Using a serrated knife, shave off the top of the cakes so that they are flat and even. Place one cake on a cutting board, serving tray or plate. Then spread a tablespoon or two of frosting onto the layer. Then repeat this with next two layers. Spread the rest of the frosting on the top and around the cake, or spread less of the frosting than made and create a naked cake look! That is what I did for my cake.
  • Cut some blueberries to decorate , put a candle in the middle of the cake or serve as is! You can keep it in an airtight container for 2-3 days in the fridge. Enjoy!:)
