My 1-year-old absolutely loves pancakes, and I have been feeding her my banana pancake recipe for months. Now that summer is around the corner, berries are in season and this recipe highlights them! These mini pancakes are healthy, packed with protein, naturally sweet and a great starter pancake for your little one. This recipe doesn’t have to be just for little ones – I love to eat these along with my baby! They’re delicious with peanut butter or a scoop of yogurt. Make a couple batches for your family in the morning and they will have the best start to their day!

For Littles
These are perfect for babies who are just starting solids because they are completely mushable. The berries lose their shape and cook in the pancake! This is a great way to get your little one to eat something good for them as they will get protein from the eggs and yogurt, and good vitamins from the fruit. You can serve these to your little 7 months +!
What can you serve these pancakes with?
I love to serve the pancakes with a scoop of yogurt, some loosened peanut butter or 100% real maple syrup. You can spread the yogurt, peanut butter or maple syrup onto the pancakes so they are not dry when your baby tries to eat them by themselves. Or you can serve the yogurt, etc. on the side and your little one can dip their pancakes. I have been teaching my 13-month-old to do that! The pancakes are pretty moist , though, and even without a dipping side your baby should be able to eat these without a problem.

How To
Combine the mashed banana, yogurt & egg.
Mix in the dry ingredients.
Fold in the berries.
Cook until brown on both sides.
Serve warm!
Mixed Berry Mini Pancakes for Toddlers and Babies

1/2 of a banana
2 tablespoons of yogurt
1 egg
2 tablespoons flour
1/2 teaspoon cinnamon
1/3 cup fresh berries
Directions
- Start melting the butter in a medium sized pan over medium heat. While the pan is heating up, mash the banana in a medium sized bowl. Once mashed, add the yogurt and egg. Whisk those until combined.
- Now add in the flour and cinnamon. Mix until the dry ingredients are fully incorporated.
- Fold in the berries until all berries are distributed evenly in the batter.
- Spoon 8 dropfuls of pancake batter into the pan. Let cook for 3-4 mins or until the bottom side of the pancake is starting to get brown. Flip and repeat with the other sides.
- Serve them warm on their own, with fruit, or with yogurt, peanut butter or 100% maple syrup. You can store in an airtight container in the fridge for up to 3 days. Enjoy!:)
