Mozzarella and Pea Quinoa

I classify this dish as a comfort dish… as well as a fresh, healthy and delicious dish! This quinoa dish highlights peas, which are in season in the springtime, and takes on a creamy texture and flavor from the mozzarella. This is the perfect dish to make when you are running low on ingredients or when you just want to make a quick and easy lunch!

I love quinoa on its own, however I know many people would agree quinoa needs a little bit of help for it to taste good. If you don’t like quinoa, I have a feeling this recipe will change your mind! The onion and peas add a present sweetness and the cheese adds creaminess and a good saltiness.

How To

Saute butter and onion, then add water and quinoa. Bring to a boil, let cook. Then add in peas, mozzarella, salt and pepper.

Ingredients

  • 1 tablespoon butter

  • 1/2 cup yellow onion chopped

  • 1 1/4 cup water

  • 1/2 cup quinoa rinsed and strained

  • 2 cups peas

  • 3/4 cup mozzarella cheese

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

Directions

  • Place the butter and onion into a medium saucepan over medium heat. Sauté for 5 minutes, until onion is lightly browned.
  • Add in the quinoa and water, stir and bring to a boil. Then turn down the heat to low and cover for 15-20 minutes, stirring occasionally, until the quinoa is done.
  • Next, add in the salt, pepper, cheese and peas. Stir for 3-4 minutes until cheese is melted and peas are warm.
  • Serve warm! You can store in an airtight container in the fridge for 3 days. Enjoy!:)
