These Parmesan baked zucchini bites are easy to make, addicting and healthy! They’re toddler and kid-friendly and serve as the perfect snack for any occasion.

This recipe is perfect to make when zucchini is abundant, but you can make it any time of year. These bites are deliciously cheesy, and the zucchini is still soft but easy to pick up and eat. This recipe is one my toddler loves, which I love because she is eating a vegetable!
All you have to do is chop up a couple of zucchini, toss them with olive oil, garlic salt and pepper. Then place them on a baking sheet and sprinkle with Parmesan cheese. Bake and broil until bubbly and golden!
I love to serve this as a side at dinner, as an appetizer or as a snack! My toddler and I will eat the whole sheet pan of them together in one sitting. I hope you love this recipe as my family and I do!

Ingredients
You will need Zucchini, Olive Oil, Garlic Salt, Black Pepper and Parmesan Cheese.

My toddler loves these zucchini bites, and it’s one way she will eat a vegetable! Zucchini are high in fiber and vitamins like C and folate. And zucchini are a very mild vegetable for our little one’s taste buds. You can serve these to your littles 9 months +.
How To

In a bowl, toss together the zucchini, olive oil, garlic salt and pepper.


Place on a sheet pan and sprinkle with Parmesan cheese. Bake at 450 for 5 minutes and broil for 5-7 minutes after that.

Parmesan Baked Zucchini Bites
Ingredients
- 2 zucchini, sliced into 1/4-inch-thick slices
- 2 tablespoons olive oil
- 3/4 teaspoon garlic salt
- 1/8 teaspoon black pepper
- 1/3 cup grated Parmesan cheese
Instructions
- Preheat your oven to 450 and cover a large baking sheet with parchment paper. Set aside.
- In a large bowl, combine the zucchini, olive oil, garlic salt and black pepper. Toss until combined.
- Spread the zucchini slices out onto the prepared sheet pan and evenly sprinkle the Parmesan cheese on top of the zucchini.
- Bake the zucchini bites at 450 for 5 minutes. Then turn the oven to broil for 5-7 minutes until the zucchini are golden and bubbly (depending on how hot your oven gets, you may need to pull them out sooner than 5-7 minutes, so it’s important to watch them closely).
- Let them cool for a couple minutes and then eat! You can store in an airtight container for up to 3 days. Enjoy!:)
