These healthy lemon squares are lemony, chewy and absolutely addicting. They’re made from all whole ingredients but have that classic lemon bar flavor. They’re no-bake and take no time to make!


I make these lemon squares for the family as a healthier sweet snack to keep around the house. The taste and smell of these squares remind me of classic lemon bars, and they have the best chewy texture.
They’re made of rolled oats, unsweetened coconut flakes, walnuts, honey and lemon juice. To make it vegan, you can use maple syrup or dates instead of honey. This is a great toddler snack (my toddler is obsessed) and a great treat to bring on the go as well a great after-school snack. These lemon squares are full of fiber, anti-inflammatory polyphenols (improves our brain function), Vitamin C and many more important nutrients.
Best part is there is no baking required; you just mix all the ingredients together in a food processor, press in a pan and chill before eating! I hope you love these lemon squares as much as my family and I do!

Ingredients
You will need Rolled Oats, Unsweetened Coconut Flakes, Walnuts – you can also use pecans or almonds, Sweetener of Choice – I use honey, but you can also use maple syrup or dates and Fresh Lemon Juice.
For Littles
My almost 2-year-old loves these so much and I love feeding them to her because of all the nutrients they contain! These will help our littles grow strong brains, support their guts and give them an immunity boost. They’re also incredibly delicious and the texture is chewy and they’re easy to eat. If you use maple syrup or dates as the sweetener, you can serve these to your little ones 9 months old+! Because honey is not recommended for babies under 12 months of age, only serve to babies 12 months + if you use honey.

How To


In a food processor, combine all the ingredients and blend until it creates a dough-like texture.


Press into a loaf pan and chill for 15 minutes in the fridge. Cut into slices.

No- Bake Healthy Lemon Squares
Ingredients
- 1 1/2 cup rolled oats
- 1/2 cup unsweetened coconut flakes
- 1/2 cup walnuts
- 3 tablespoons honey OR 3 tablespoons maple syrup OR 3-4 dates
- Juice of half a lemon
Instructions
- Cover a 9×5 loaf pan with parchment paper and set aside.
- In a food processor, combine all the ingredients and blend until a dough-like texture is created.
- Using your hands, press the dough into the loaf pan until the dough is evenly flattened (see picture above).
- Place in the fridge for 15 minutes to chill. Once chilled, cut into 18 squares or as many as you prefer.
- Store in the fridge for up to 4 days. Enjoy!:)
