Ingredients
1 1/2 cup rolled oats
1/2 cup unsweetened coconut flakes
1/2 cup walnuts
3 tablespoons honey OR 3 tablespoons maple syrup OR 3-4 dates
Juice of half a lemon
Instructions
Cover a 9x5 loaf pan with parchment paper and set aside.
In a food processor, combine all the ingredients and blend until a dough-like texture is created.
Using your hands, press the dough into the loaf pan until the dough is evenly flattened (see picture above).
Place in the fridge for 15 minutes to chill. Once chilled, cut into 18 squares or as many as you prefer.
Store in the fridge for up to 4 days. Enjoy!:)
