No- Bake Healthy Lemon Squares

Ingredients
  

  • 1 1/2 cup rolled oats
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup walnuts
  • 3 tablespoons honey OR 3 tablespoons maple syrup OR 3-4 dates
  • Juice of half a lemon

Instructions
 

  • Cover a 9x5 loaf pan with parchment paper and set aside.
  • In a food processor, combine all the ingredients and blend until a dough-like texture is created.
  • Using your hands, press the dough into the loaf pan until the dough is evenly flattened (see picture above).
  • Place in the fridge for 15 minutes to chill. Once chilled, cut into 18 squares or as many as you prefer.
  • Store in the fridge for up to 4 days. Enjoy!:)
