Tortilla and Pinto Scramble

I am always looking for ways to mix it up with scrambled eggs. This recipe is a complete pantry pull, using a can of pinto beans and bag of corn tortillas! Add some salsa and top with cheese and you have a delicious breakfast or lunch! The eggs coat the tortillas and beans in the best way, and the salsa adds a nice tomato flavor and subtle spice. The texture is soft and the smell is divine. Garnish with some avocado and sour cream and you have a complete meal!

You can easily double this recipe to feed a bigger family!

For Littles

This is a great breakfast or lunch for your little ones! Eggs are great protein, and this will also introduce your little to new textures and flavors!

You can use mild salsa if you’re making it for your kiddo so the spice is not overpowering. Also, instead of adding sour cream on top, add a scoop of yogurt! It adds creaminess and extra protein! You can serve this 9 months +! If you serve before 9 months, just make sure the smash the beans a bit before serving.

Saute the beans, tortillas and salsa. Then add the eggs.

Cook the eggs with the bean and tortilla mixture and top with cheese.

Top with avocado and sour cream!

Tortilla and Pinto Scramble

Ingredients

  • 1 tablespoon butter

  • 1 cup pinto beans

  • 2 (6 inch) tortillas torn up into smaller pieces

  • 1/3 cup salsa of your choice

  • 2 whole eggs

  • 3/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Splash of milk

Directions

  • Heat a pan over medium heat with the butter. While the pan is heating up, scramble the eggs with a splash of milk, salt and pepper in a bowl and set aside.
  • Once pan is hot, throw in the beans, torn up pieces of tortilla and salsa. Sauté for 3-4 minutes, until tortillas and beans are slightly soft.
  • Move the beans and tortillas over to the side, pour the scrambled eggs on the other side of the pan and let them sit for a minute or two. Then mix everything together and keep sautéing until all the eggs are cooked, about 3 minutes.
  • Top the scramble with the cheese, and cover for 2 minutes until the cheese is melted.
  • Serve warm! You can add chopped avocado, sour cream, yogurt or more salsa! Enjoy!:)
