These apple, banana and carrot mini muffins are the perfect snack to serve to your babies, toddlers and kids. They’re naturally sweetened, full of yummy texture and are fun to eat.

These ABC muffins are the perfect muffin to make for your little ones and are a fun back-to-school snack. They have no refined sugars, so they’re also baby-friendly. The banana must be ripe because that is what sweetens (along with the apple) the muffins. The carrots add nice texture, and the cinnamon adds another element of flavor.
All you do is grate your apple and carrot. Add those to your mashed banana, then add in the rest of the wet ingredients and mix. Then mix in the dry ingredients and scoop into a greased mini muffin pan. Then bake and enjoy!
I love to serve these as a snack throughout the day. They’re super delicious with some peanut butter or jam spread onto the muffins. That is how we eat them! They’re freezer friendly and easy to pack on the go. I hope you love this recipe as much as my toddler and I do!

Ingredients
You will need Whole Wheat Flour – all purpose can be used, Baking Soda, Baking Powder, Cinnamon, Salt, a Ripe Banana, Apple, Carrot, Coconut Oil – you can also use butter, Milk – of your choice, Egg and Vanilla Extract.
Silicone Mini Muffin Pan – this is the mini muffin pan I use from Amazon.

These are the perfect snack to make for your littles! They have no refined sugars, are packed with fruits and veggies and are easy to eat. They’re a great snack to serve as school starts back up because of the name! You can serve these to your littles 8 months +.

How To





Mash your banana, add in your grated apple and carrot and mix. Add in the rest of the wet ingredients and mix. Then add in the rest of the dry and mix.


Scoop into a greased mini muffin pan and bake at 350 for 15-17 minutes. Enjoy!:)

ABC Mini Muffins (Apple, Banana, Carrot)
Ingredients
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 very ripe banana
- 2/3 cup grated apple
- 1/3 cup grated carrot
- 1/4 cup melted coconut oil
- 1/2 cup milk of your choice
- 1 whole egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 and grease a 24-cup mini muffin pan. Set aside.
- In a small bowl, combine the flour, baking soda, baking powder, cinnamon and salt. Whisk and set aside.
- In a large bowl, mash the banana completely then add in the grated apple and carrot and mix. Add in the coconut oil, milk, egg and vanilla extract. Mix until combed.
- Scoop the batter evenly into the mini muffin pan. Bake at 350 for 15-17 minutes, until a toothpick some out clean.
- Let cool for 5-10 minutes and then pop them out. Eat warm or at room temperature. You can store in an airtight container for up to 3 days or freeze for up to 3 months. Enjoy!:)
