Avocado Chickpea Mash

Trying to come up with quick but healthy meals has been my mission the last couple of weeks due to a busy first part of summer! This avocado and chickpea mash has become one of my quick but healthy go-to’s. This mash is creamy, bright and filling.

Besides the avocado and lemon, this recipe is a complete pantry pull! It’s an easy go-to when you just want to whip up something quick for lunch.

The avocado adds creaminess and healthy fat and the chickpeas add a hardiness and protein. The lemon juice is my favorite ingredient in the mash, adding a bright citrusy flavor!

For Littles

By itself or spread on some bread or toast, this is a healthy meal to serve to your little one. Your baby will be getting healthy fats and good protein and will be introduced to fun flavors and textures in this! You can serve this 7 months +! If you are serving your baby under a year old, make sure you mash the all the ingredients a bit more so there are no big chunks of chickpeas.

How To

Combine all the ingredients and mash together to the consistency of your choice.

Serve over toast!

Ingredients

  • 1 avocado

  • 1 cup chickpeas strained and rinsed

  • 2 tablespoons olive oil

  • 1/2 tablespoon lemon juice

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1 teaspoon salt

  • 1/4 teaspoon black pepper

Directions

  • In a medium sized bowl, combine all the ingredients and mash using a pastry cutter, potato masher or fork. Mash until you get a consistency you like (I prefer when the chickpeas still keep some of their shape but are completely combined into the mix).
  • Using a rubber spatula, spread over toast of your choice. You can keep in an airtight container for up to 2 days. Enjoy!:)
