

Since I have a toddler, making healthy but yummy snacks is a part of my weekly routine! These blueberry bliss balls are one of my favorites to make to her (and myself) because they are fresh, sweet and nutritious. They’re also super fun to make, easy to eat, and beautiful to look at! To top them off I love to roll them in some pulsed coconut flakes. These bliss balls are packed with fiber, vitamin C and antioxidants. Such a delicious snack to eat throughout the day, to take on the go or to make for a get-together or party. I am just as obsessed with these as my toddler is. I hope you love these as much as my family and I do!


Ingredients
You will need Rolled Oats – quick oats will work as well because they will end up being pulsed in the food processor anyway, Ground Flaxseed Meal, Unsweetened Coconut Flakes, Frozen Blueberries – frozen is best because they create the perfect texture in order to make the balls stick together, and you will also need Honey – you can use maple syrup as well.

For Littles
My toddler is absolutely obsessed with these. They are such a nutritious snack for your little one but also incredibly delicious! It’s a fun thing to include your littles in if you would like them to help make the balls or roll them in the coconut. You can serve these to your littles 12 months +! **if you use maple syrup in place of honey you can feed these under the age of 1; however, if you use honey please don’t feed to babies under 12 months old as it is not recommended for this age group.

How To


Combine all the ingredients in a food processor and pulse until combined.


Roll into balls and roll in coconut flakes. Chill and then serve!
Blueberry Bliss Balls

1 1/4 cup rolled oats
1/4 cup ground flaxseed meal
1/3 cup unsweetened coconut flakes
1 cup frozen wild blueberries
1 tablespoon honey (or maple syrup if preferred OR if feeding to babies under the age of 12 months)
Another 1/3 cup coconut flakes for rolling the bliss balls in (optional)
Directions
- Prepare a baking sheet or large plate with parchment paper and set aside. If you plan on rolling the bliss balls in coconut flakes, pulse the coconut flakes in a little blender. Place the flakes in a little bowl and set aside.
- In a food processor, combine all the ingredients and pulse until completely combined. It should create a paste like texture.
- Roll into balls and roll in the pulsed coconut flakes. Place on the parchment paper and chill in the fridge for at least 15 minutes.
- I like to keep them in the fridge because they are so delicious cold! You can keep in an airtight container for up 3 days. Enjoy!:)
