Blueberry Bliss Balls

Ingredients
  

  • 1 1/4 cup rolled oats
  • 1/4 cup ground flaxseed meal
  • 1/3 cup unsweetened coconut flakes
  • 1 cup frozen wild blueberries
  • 1 tablespoon honey (or maple syrup if preferred OR if feeding to babies under the age of 12 months)
  • Another 1/3 cup coconut flakes for rolling the bliss balls in (optional)

Instructions
 

  • Prepare a baking sheet or large plate with parchment paper and set aside. If you plan on rolling the bliss balls in coconut flakes, pulse the coconut flakes in a little blender. Place the flakes in a little bowl and set aside.
  • In a food processor, combine all the ingredients and pulse until completely combined. It should create a paste like texture.
  • Roll into balls and roll in the pulsed coconut flakes. Place on the parchment paper and chill in the fridge for at least 15 minutes.
  • I like to keep them in the fridge because they are so delicious cold! You can keep in an airtight container for up 3 days. Enjoy!:)
