Cornflake Marshmallow Bars

Who doesn’t love a dessert that includes cereal? I LOVE Milk Bar and how they use everyday ingredients like cereal in their baked goods. This dessert is rich, gooey and the cornflakes add an awesome crunch. When I eventually have kids old enough to ask for specific desserts, I have a feeling this will be one they ask for.

This is a no bake recipe, perfect for summer. All you must use for this recipe is your stovetop and microwave. Easy!

How to Make:

First, melt the peanut butter, corn syrup and sugar together until all melted and sugar dissolved. Then throw in the marshmallows and stir for one minute. Then, turn off the heat and and fold in the cornflakes.

Once all combined, press into a greased 8×8 pan. Your last step is to create the topping by microwaving the chocolate chips and peanut butter until melted. Pour over the cornflake filling and spread with a rubber spatula until covered. Leave them out at room temperature until cooled. Cut them into squares and enjoy!

If you want to make this treat for a party, you can easily double this recipe and used a 13×9 pan. Trust me, these will be gone before you know it, so double the recipe to be safe!

Tips:

When you throw in the marshmallows for the last minute, keep stirring until slightly melted. Once you see the marshmallows slightly melted, you can then turn off the heat and fold in the cornflakes.

Fold in the cornflakes until just combined – I like to lightly fold them in, but even if you feel like you are crushing them a bit, there is no need to fret. You will still have crunchiness from the cornflakes!

I like to use a rubber spatula for all the combining, folding, pressing and spreading!

Oeey gooey, crunchy, chewy and soft deliciousness! This is the best and easiest cereal treat to make anytime for any occasion!

Ingredients

  • Filling
  • 4 cups Cornflakes

  • 1 cup Marshmallows

  • 1 cup Peanut Butter

  • 1 cup Sugar

  • 1 cup Corn Syrup

  • Chocolate Topping
  • 1 cup Semi-Sweet Chocolate Chips

  • 2 tablespoons Peanut Butter

Directions

  • Lightly grease an 8×8 square pan and set aside.
  • In a saucepan over low to medium heat, combine peanut butter, sugar and corn syrup until the sugar has dissolved and the filling is gooey – about 2 minutes.
  • Throw in the marshmallows for an additional minute or until the marshmallows are slightly melted.
  • Turn off the heat and fold in the cornflakes.
  • Pour the mixture into the greased square pan and press it down with your rubber spatula.
  • Combine the chocolate chips and 2 tablespoons of peanut butter in a small bowl. Warm it in a microwave for 15 second intervals, taking it out and stirring each time. Warm it until melted.
  • Pour the chocolate mixture on top of the cornflake filling and spread with a rubber spatula until the cornflake mixture is evenly covered with the chocolate topping.
  • Leave out at room temperature for 2 hours, or until it has come to room temperature.
  • Cut into 16 small bars and serve. Enjoy!

Notes

  • If you want, you can put the bars into the fridge to help it set faster. However, I prefer them at room temperature and even slightly warm šŸ™‚
