

A lunch favorite of my toddler’s! There is nothing I love more than making a pasta sauce out of a vegetable. This healthy sauce is so delicious, you would never know that spinach is the main ingredient. The cream cheese adds a nice creaminess and an added punch of protein. To finish you add pasta water and salt and pepper to taste. It’s all done in a blender, which means making the actual sauce takes seconds. Willow and I eat every last bite, and she will slurp up every last bit of the sauce on her plate. This spinach pasta sauce is a winner, and I hope you love this as much as my toddler and I do!


Ingredients
You will need Spinach – fresh or frozen will work, Plain Cream Cheese, Pasta Water – the water that the pasta is cooked in, Salt and Pepper.
For Littles
I make this sauce specifically for Willow, but of course I eat it with her because it is so delicious. I feel good knowing she is eating a vegetable and in a way that is yummy to her! Spinach is a superfood that provides tons of vitamins like K, A, and C, fiber and folate. Those are vital for your little one’s growth! The cream cheese adds a good boost of protein as well! You can serve this to your little 7 months +!

How To


Cook your pasta. Combine the spinach, cream cheese, pasta water, salt and pepper. Blend!


Pour over cooked pasta. Enjoy!
Creamy Spinach Pasta Sauce

2 cups pasta of your choice (I love to use the wheel pasta shape for this)
2 cups spinach * see notes
1/4 cup plain cream cheese
1-3 tablespoons of pasta water
1/2 teaspoon salt
Freshly cracked black pepper to taste
Directions
- Cook your pasta while your prepare the sauce. Cook according to the box directions or cook to your likeness.
- In a blender, combine the spinach, cream cheese, pasta water (pull some water out of the pot the pasta is cooking in), salt and pepper. Blend until completely smooth.
- Set the sauce aside for a couple minutes while the pasta continues to cook.
- Drain the pasta and then pour the sauce over the freshly cooked pasta.
- Top with Parmesan cheese or serve on its own. You can store in an airtight container in the fridge for up to 3 days. Enjoy!:)
Notes
- * Fresh vs Frozen Spinach – if you are using fresh spinach, you will need less pasta water and if you are using frozen spinach you will likely need more pasta water. When using fresh, start off with 1 tablespoon of pasta water and then go from there!
