Creamy Spinach Pasta Sauce

Ingredients
  

  • 2 cups pasta of your choice (I love to use the wheel pasta shape for this)
  • 2 cups spinach * see notes
  • 1/4 cup plain cream cheese
  • 1-3 tablespoons of pasta water
  • 1/2 teaspoon salt
  • Freshly cracked black pepper to taste

Instructions
 

  • Cook your pasta while your prepare the sauce. Cook according to the box directions or cook to your likeness.
  • In a blender, combine the spinach, cream cheese, pasta water (pull some water out of the pot the pasta is cooking in), salt and pepper. Blend until completely smooth.
  • Set the sauce aside for a couple minutes while the pasta continues to cook.
  • Drain the pasta and then pour the sauce over the freshly cooked pasta.
  • Top with Parmesan cheese or serve on its own. You can store in an airtight container in the fridge for up to 3 days. Enjoy!:)

Notes

  • * Fresh vs Frozen Spinach - if you are using fresh spinach, you will need less pasta water and if you are using frozen spinach you will likely need more pasta water. When using fresh, start off with 1 tablespoon of pasta water and then go from there!
