Healthy Banana Breakfast Cookies

My 14-month-old decided that breakfast wasn’t her favorite meal anymore (sad day for mom), so it challenged me to make her something that she wouldn’t be able to resist eating, but that was also healthy! That’s how this breakfast cookie came to be. It’s easy to make and comes together quickly. These cookies not only offer many nutrients including fiber, protein and healthy fats, but they only require 5 ingredients. No eggs, milk, butter or sugar are used. The natural sweetness from the banana, peanut butter and honey is all you need! This is perfect to make ahead and keep in the pantry to grab!

Ingredients

Ripe bananas, peanut butter, pecans, honey and rolled oats

Ingredient substitutions

Honey- if you would like to make these vegan or serve to babies under the age of 1, you could substitute maple syrup for the honey.

Peanut Butter- you can use any type of nut butter.

Pecans- you can use any type of nut, or you can leave them out.

Bananas- I haven’t used anything in place of bananas, however you can make this with unripe bananas if that is your preference

For Littles

My 14-month-old is obsessed with these cookies and goes crazy for them every morning. You can offer these to your babies at 12 months+ due to the addition of the honey (If you substitute maple syrup for the honey you could offer at 8+ months)! Make sure you finely mince the pecans as they can be a choking hazard to littles if they are served in big pieces.

These cookies are an amazing source of fiber (from the oats), healthy fats (peanut butter and pecans), and protein (oats and peanut butter). I always feel like Willow gets what she needs nutrient-wise when she eats one of these for breakfast.

How To

Mix all the ingredients together.

Scoop the dough, form the cookies and bake.

Serve!

Ingredients

  • 2 ripe bananas

  • 1/2 cup peanut butter

  • 1/4 cup minced pecans

  • 1 tablespoon honey

  • 1 1/2 cups rolled oats

  • A couple pinches of cinnamon

Directions

  • Preheat your oven to 350 and line a baking sheet with parchment paper.
  • In a big bowl, throw in the bananas and mash until there are no more big chunks. Then add the peanut butter, pecans, honey and rolled oats. Mix together until combined.
  • Using a cookie scoop or your hands, scoop out the dough and form into 10 cookies and place them on the parchment. They should be about a tablespoon each.
  • With a damp hand, press into each cookie lightly to flatten them slightly. Sprinkle with cinnamon if you like.
  • Place in the oven for 13-15 minutes. Take out and leave on the baking sheet for 5 minutes
  • Serve right away or store them in an airtight container for up to a week or freeze for up to 3 months! Enjoy!:)
