I love incorporating kale into dishes when it’s in season… and what better way to incorporate it than with pasta? This kale pasta sauce is fresh, creamy and oh so pretty! It doesn’t even taste like you’re eating kale when you take a bite of pasta coated in the sauce. This sauce is also incredibly easy to make. This recipe only uses 6 ingredients, 2 of them being salt & pepper!

This recipe is perfect for babies and toddlers! Any kale you can get your baby to eat is beneficial for their health, and an easy way to serve it is as a pasta sauce! You can serve it to your baby 7 months+!

If you are unsure of serving it to your baby or you are just starting solids, you can start out with a small serving and go from there. You can also cut the pasta up into small pieces. I served this to my baby starting at 7 months. This is how I served it to my 1-year-old:

How To

Blanch the kale, the blend all of the sauce ingredients.

Toss with some freshly cooked pasta! Top with some parmesan cheese.

Ingredients

  • 3 stalks of kale

  • 2 tablespoons olive oil

  • 1 teaspoon fresh lemon juice

  • 1 tablespoon yogurt

  • 1/4 teaspoon salt

  • Freshly cracked pepper

Directions

  • Start two pots of boiling water, one small pot for the kale and one large pot for the pasta. Make sure to salt the pasta water generously!
  • To blanch the kale, cut or tear the kale leaves off the stems and throw the kale into the pot of boiling water for 1 minute. Then take the kale out and put it in cold water.
  • Throw in the pasta and let cook while you make the sauce. In a small blender or food processor, blend the kale, yogurt, olive oil, lemon juice, salt & pepper.
  • Drain your pasta and place in a big bowl. Spoon on a couple of tablespoons of the kale sauce and combine using kitchen tongs. Add more sauce as needed.
  • Serve with parmesan cheese. You can store in an airtight container in the fridge for up to 3 days. Enjoy!:)
