It’s the season for pumpkins and the flavor of these fritters will really get you and your toddler in the fall mood! I always keep a couple of cans of pumpkin puree in my pantry as well as rolled oats, so this recipe is a convenient one. This recipe is healthy, full of texture, flavorful and hardy. I make this recipe for my toddler; however, I also love to eat them with her because of how scrumptious they are.

These fritters are perfect for your toddlers and kids not only because they are easy to eat, but they are oh so healthy. The oats and pumpkin make these fritters incredibly fiber rich and the egg adds protein. The ginger and cinnamon are also so good for digestive health!

These are fun to plate for your little one as well. I like to place the fritters on the plate and then using a small cookie scoop, scoop the maple yogurt and place on top of the fritters. Or you can put the yogurt on the side for dipping.

The maple yogurt is not only full of protein, but the maple syrup adds a healthy dose of sweetness and just completes the fritter dish. You can serve these fritters to your baby 8 months+!

How To

Whisk your pumpkin, egg and maple syrup. Add in the oats, cinnamon, ginger and salt.

Cook and make your yogurt. Serve warm!

Ingredients

  • 1 tablespoon butter

  • 1/4 cup pumpkin puree

  • 1 egg

  • 1 teaspoon maple syrup

  • 1/2 cup rolled oats

  • 1/4 teaspoon cinnamon

  • 1/8 teaspoon ground ginger

  • pinch of salt

Directions

  • Melt the butter in a medium sized skillet over medium heat.
  • While your pan is preheating, make the fritters. In a medium sized bowl, whisk the pumpkin, egg and maple syrup together until combined. Then add in the oats, cinnamon, ginger and salt. Mix using a rubber spatula until combined.
  • Form the fritter mixture into 6 fritters and place on the skillet. Cook on one side for 3-4 minutes, or until it’s golden brown, and then flip and repeat on the next side.
  • While your fritters are cooking, make the maple yogurt. In a small bowl, combine both the yogurt and maple syrup. Mix with a rubber spatula until combined. Set aside.
  • Take the fritters off the skillet and place on a plate to cool. Serve warm with the maple yogurt. You can store the fritters and yogurt in an airtight container for up to 2 days. Enjoy!;)
