Melt the butter in a medium sized skillet over medium heat.
While your pan is preheating, make the fritters. In a medium sized bowl, whisk the pumpkin, egg and maple syrup together until combined. Then add in the oats, cinnamon, ginger and salt. Mix using a rubber spatula until combined.
Form the fritter mixture into 6 fritters and place on the skillet. Cook on one side for 3-4 minutes, or until it’s golden brown, and then flip and repeat on the next side.
While your fritters are cooking, make the maple yogurt. In a small bowl, combine both the yogurt and maple syrup. Mix with a rubber spatula until combined. Set aside.
Take the fritters off the skillet and place on a plate to cool. Serve warm with the maple yogurt. You can store the fritters and yogurt in an airtight container for up to 2 days. Enjoy!;)
