I could also call this recipe, “Willow’s Favorite Oat Bars”, because each time I make these she eats about 5 bars in one sitting. These bars are soft but chewy, sweet, delicious and incredibly healthy. These bars are also egg free, gluten free and sugar free. I call them a superfood bar, because the avocado and raspberries in these bars are considered super foods! All the flavor comes in naturally from the ingredients. These bars are made out of avocado, banana, peanut butter, raspberries and oats. I love how simple the ingredients are as well as how simple it is to make them. This recipe could be an awesome baby led weaning recipe, as well as a great snack or breakfast. I hope you love these as much as my toddler and I do!

I make these bars specifically for Willow because of not only how obsessed she is with them, but because they are such a healthy bar. They are easy to eat, which makes this recipe a great baby led weaning for your little one. You can serve this to your little 7 months +!

How To

Combine the avocado, banana and peanut butter. Mash until combined.

Add in the raspberries and oats. Stir until combined.

Throw in a greased 8×8 top with more raspberries. Bake and let the bars cool and then serve!

Ingredients

  • 1 ripe avocado

  • 1 banana

  • 1/4 cup peanut butter

  • 1 cup raspberries, split

  • 1 1/4 cup rolled oats

Directions

  • Preheat your oven to 350 and grease a 8×8 glass baking dish. Set aside!
  • In a big bowl, combine the avocado, banana and peanut butter. Mash until all is combined, little chunks of avocado or banana are okay.
  • Add in the oats and half of the raspberries. Mix with a rubber spatula until the oats and raspberries have evenly distributed.
  • Throw the mixture into the greased baking dish and press it down with a rubber spatula until the mixture is evenly spread. Top the mixture with the rest of the raspberries.
  • Bake for 35-40 minutes, until the bars have become firm.
  • Let them cool, and then cut into 16 squares. You can store in an alright container for up to 3 days or freeze for up to 3 months. Enjoy!:)
