As cold and flu season is in full swing, having something on hand to help our immune systems fight off colds and viruses is incredibly helpful. I love this especially as a toddler mom, because we all know how often kids get sick. My 1 1/2 year old is a popsicle lover, and so I knew making popsicles like these would be the best way to make sure she is getting enough vitamin C to help her along while sick. These popsicles are sweet from all the natural sugars of the oranges and berries, has a slight tang from the lemon juice, a subtle hint of spice from the ginger will come through (don’t worry, they are not spicy! My 1 1/2 year old eats these popsicles!). All these ingredients will provide us what we need this fall & winter time. I hope you love these as much as my daughter and I do!

My 1 1/2 year old love these popsicles, and I know your little one will too! I just started giving these to Willow, and she will eat one every night after dinner when she is sick. She is obsessed. You serve these to your little 7 months +! Although I started making these for Willow when she was around 1 years old. I’m sure she would have loved them as a baby, too!

How To
Combine all the ingredients and blend.
Place a mash strainer over a large measuring cup and pour the mixture into it. Mash the mixture until there is no more liquid left in the strainer.
Pour the the strainer liquid into the popsicle molds. Throw in the fridge for at least 2-3 hours. Enjoy!
Vitamin C Popsicles

6 oranges peeled and sliced
1/2 cup frozen berries
The juice of 1 lemon
1/4-3/4 teaspoon grated fresh ginger * (see notes)
Directions
- Combine all the ingredients into a large blender. Blend for 2 minutes, until you have created a liquid and everything has broken down ( I like to blend for 2 minutes just to make sure all the ingredients are getting a really good blend).
- Grab a mesh strainer and place that over a large measuring cup (the one I used was a glass 4 cup measuring cup).
- Pour 1/3 of the mixture into the mesh strainer. Using a rubber spatula stir the liquid as it drips into the measuring. You then want to use the rubber spatula and mash until there is no more liquid in the strainer. Repeat this process 2 more times. By the end of it, there should be pith left in the strainer when you are done.
- Pour the strained mixture into the popsicle mold evenly into each slot, making sure to leave a little room at the top of each popsicle slot.
- Place the popsicle handles into each slot and place in the fridge for 2-3 hours.
- Take out of molds and enjoy! You can leave in the freezer for up to 3 months. Enjoy!:)
Notes
- * I use 3/4 teaspoon of fresh ginger in our mixture and my toddler eats it (I only really taste it on my tongue after I finish the popsicle). However, if you are worried about it, start with 1/4 to 1/2 teaspoon fresh grated ginger.
