Ingredients
6 oranges peeled and sliced
1/2 cup frozen berries
The juice of 1 lemon
1/4-3/4 teaspoon grated fresh ginger * (see notes)
Instructions
Combine all the ingredients into a large blender. Blend for 2 minutes, until you have created a liquid and everything has broken down ( I like to blend for 2 minutes just to make sure all the ingredients are getting a really good blend).
Grab a mesh strainer and place that over a large measuring cup (the one I used was a glass 4 cup measuring cup).
Pour 1/3 of the mixture into the mesh strainer. Using a rubber spatula stir the liquid as it drips into the measuring. You then want to use the rubber spatula and mash until there is no more liquid in the strainer. Repeat this process 2 more times. By the end of it, there should be pith left in the strainer when you are done.
Pour the strained mixture into the popsicle mold evenly into each slot, making sure to leave a little room at the top of each popsicle slot.
Place the popsicle handles into each slot and place in the fridge for 2-3 hours.
Take out of molds and enjoy! You can leave in the freezer for up to 3 months. Enjoy!:)
Notes
* I use 3/4 teaspoon of fresh ginger in our mixture and my toddler eats it (I only really taste it on my tongue after I finish the popsicle). However, if you are worried about it, start with 1/4 to 1/2 teaspoon fresh grated ginger.
