You will want to cook a head of broccoli in boiling water for a couple minutes until the broccoli is tender
You’ll then transfer the broccoli to a pan where you can mash the broccoli! Use a fork to mash the broccoli until there are no big pieces of broccoli anymore.
Crack an egg on top, add the Parmesan cheese, fresh bread* (see notes) pieces, salt u0026 pepper. Mix until combined.
Heat up a skillet over medium heat and brush the pan with olive oil. Form the mix into pucks and place them on the skillet. You can create anywhere from 6-8 fritters depending on the size you make. Cook them until brown on both sides.
Serve them warm with some yogurt! You can store in an airtight container for up to 3 days. Enjoy!:)

I love sourdough bread for the bread pieces - however if you don't have fresh bread, you can substitute bread crumbs.
