Broccoli Fritters

Ingredients
  

  • 1 head of broccoli
  • 1/2 cup bread (torn into pieces)
  • 1/3 cup parmesan cheese
  • 1 egg
  • 1/2 teaspoon salt
  • Fresh Cracked Pepper

Instructions
 

  • You will want to cook a head of broccoli in boiling water for a couple minutes until the broccoli is tender
  • You’ll then transfer the broccoli to a pan where you can mash the broccoli! Use a fork to mash the broccoli until there are no big pieces of broccoli anymore.
  • Crack an egg on top, add the Parmesan cheese, fresh bread* (see notes) pieces, salt u0026 pepper. Mix until combined.
  • Heat up a skillet over medium heat and brush the pan with olive oil. Form the mix into pucks and place them on the skillet. You can create anywhere from 6-8 fritters depending on the size you make. Cook them until brown on both sides.
  • Serve them warm with some yogurt! You can store in an airtight container for up to 3 days. Enjoy!:)

Notes

  • I love sourdough bread for the bread pieces - however if you don't have fresh bread, you can substitute bread crumbs.
