Bunny Biscuits

Ingredients
  

  • 1 cup plain whole fat Greek yogurt
  • 1/4 cup melted unsalted butter
  • 1 whole eggs
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • An additional 1/4 cup melted unsalted butter to coat
  • An additional 1/4 cup granulated sugar to coat

Instructions
 

  • Preheat your oven to 375 and set out a baking sheet with either parchment paper or a silicone baking mat. Set aside.
  • In a big bowl, combine your yogurt, butter, egg and vanilla extract. Whisk until combined.
  • Add in your flour, sugar, baking powder and salt. Mix with a rubber spatula or wooden spoon until a shaggy ball of dough is created.
  • On a lightly floured surface, knead the dough until smooth, this should take only a minute or two.
  • Re-flour your surface if necessary and roll out your dough about 1/4 inch thick. I like to roll out the dough in batches since there is a lot of it!
  • Using the bunny cookie cutter or cutter or your choice, cut out your shapes and place on your baking sheet. Bake for 9-10 minutes, until the bottoms are barely brown and the tops are set. You will be making 4-5 batches of these depending on the size of your cookie cutter! * see notes
  • Let cool. Then put your melted butter and sugar in two different bowl. Dip your biscuits into the butter first, and then dip the bunny into the bowl of sugar to coat. They are done!
  • You can store in an airtight container for up to 3 days. Enjoy!:)

Notes

  • * this dough makes plenty of biscuits depending on the size of your cutter! If you only want to use part of the dough, you can refrigerate the dough in plastic wrap for up to 2 days and make more biscuits then!
