Carrot Cake Bliss Balls

Ingredients
  

  • 2 medium carrots (about 1 cup), washed and grated
  • 1 cup rolled oats
  • 1/2 cup walnuts
  • 1/3 cup unsweetened coconut flakes
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground ginger
  • 1/3 cup pulsed unsweetened coconut flakes for rolling (optional)

Instructions
 

  • Prepare a baking sheet or a large plate with parchment paper and set aside. If you plan on rolling the bliss balls in coconut flakes, put the coconut flakes in a small blender and pulse. Put the coconut flakes in a small bowl and set aside.
  • In a food processor, combine all the ingredients and pulse until all the I ingredients have fused. It should create a paste like texture (see picture above).
  • Roll into balls and roll into the pulsed coconut flakes. Place on the parchment paper and chill in the fridge for at least 15 minutes.
  • I like to keep them in the fridge because they are so delicious chilled. You can store in an airtight container for up to 3 days. Enjoy!:)
