Ingredients
2 medium carrots (about 1 cup), washed and grated
1 cup rolled oats
1/2 cup walnuts
1/3 cup unsweetened coconut flakes
1 tablespoon maple syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground ginger
1/3 cup pulsed unsweetened coconut flakes for rolling (optional)
Instructions
Prepare a baking sheet or a large plate with parchment paper and set aside. If you plan on rolling the bliss balls in coconut flakes, put the coconut flakes in a small blender and pulse. Put the coconut flakes in a small bowl and set aside.
In a food processor, combine all the ingredients and pulse until all the I ingredients have fused. It should create a paste like texture (see picture above).
Roll into balls and roll into the pulsed coconut flakes. Place on the parchment paper and chill in the fridge for at least 15 minutes.
I like to keep them in the fridge because they are so delicious chilled. You can store in an airtight container for up to 3 days. Enjoy!:)
