Servings 4servings
Ingredients
1/2 lb of any pasta of your choice
1 cup frozen veggies
1/3 cup hot water
3 tablespoons cream cheese
2 teaspoons olive oil
1/2 teaspoon salt
Pinch of black pepper
Instructions
Bring a big pot of salted water up to a boil and pour in your pasta. Cook your pasta until it’s done to your liking. * (See notes)
While your pasta is cooking, make your sauce. In a blender, or small food processor, pour in the frozen veggies and hot water. Let the veggies soak in the water for 2 minutes.
Add in the cream cheese, olive oil, salt and pepper to the blender. Blend until smooth.
Strain your pasta and set up a plate with a serving of pasta. Spoon a couple of tablespoons of sauce onto the pasta, then mix until the pasta is coated with the sauce.
Serve with Parmesan cheese on top if you would like! You can store the pasta and sauce separately in airtight container for up to 3 days. Enjoy!:)
Notes
* Make sure you salt the water generously when cooking the pasta so the pasta has some flavor when mixed in with the sauce. I like to add in a couple tablespoons of salt per lb of pasta.
