Frozen Vegetable Pasta Sauce

Ingredients
  

  • 1/2 lb of any pasta of your choice
  • 1 cup frozen veggies
  • 1/3 cup hot water
  • 3 tablespoons cream cheese
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • Pinch of black pepper

Instructions
 

  • Bring a big pot of salted water up to a boil and pour in your pasta. Cook your pasta until it’s done to your liking. * (See notes)
  • While your pasta is cooking, make your sauce. In a blender, or small food processor, pour in the frozen veggies and hot water. Let the veggies soak in the water for 2 minutes.
  • Add in the cream cheese, olive oil, salt and pepper to the blender. Blend until smooth.
  • Strain your pasta and set up a plate with a serving of pasta. Spoon a couple of tablespoons of sauce onto the pasta, then mix until the pasta is coated with the sauce.
  • Serve with Parmesan cheese on top if you would like! You can store the pasta and sauce separately in airtight container for up to 3 days. Enjoy!:)

Notes

  • * Make sure you salt the water generously when cooking the pasta so the pasta has some flavor when mixed in with the sauce. I like to add in a couple tablespoons of salt per lb of pasta.
