Ingredients
1/2 cup peanut butter
1/2 cup chocolate chips
1/4 cup coconut oil (butter works too)
1/2 cup honey
1 1/4 cup rolled oats (or instant oats)
2 tablespoons unsweetened cocoa powder
Instructions
Cover a large baking sheet with parchment paper and set aside.
In a large saucepan, melt the peanut butter, chocolate chips, coconut oil and honey. Stir to melt!
Once all melted and combined, turn the heat off. Stir in the rolled oats and cocoa powder.
Using a tablespoon scoop or spoon, scoop tablespoon-sized cookies onto the parchment paper. Make sure they are spaced out about an inch. You will get anywhere from 20-24 cookies.
Chill in the fridge for 20 minutes and then serve! You can store in the fridge for up to 3 days. Enjoy!:)
