Iron Rich Date Balls

Ingredients
  

Date Balls

  • 1/2 cup whole almonds
  • 1/4 cup ground flax meal or flaxseeds *see notes
  • 8 dates, pitted

Chocolate Drizzle (optional)

  • 2 tablespoons chocolate chips
  • 1 teaspoon coconut oil

Instructions
 

  • Prepare your almonds by roasting them in a small saucepan over low/medium heat for 5 minutes until lightly roasted (you can smell it and see that they’re golden). Prepare your dates by soaking them in hot water for 5 minutes until softened.
  • Prepare a large plate or baking sheet with parchment paper. Set aside.
  • In a food processor, process the almonds and flax until fine (see picture above). Then add in soaked dates and pulse until a dough is formed.
  • Create 12 1/2 tablespoon-sized balls and place on the parchment paper.
  • If you are making a chocolate drizzle, combine the chocolate chips and coconut oil in a glass measuring cup and microwave for 20 seconds and stir until melted.
  • Drizzle the chocolate over the date balls. Place these in the fridge for 20 minutes, until set.
  • Serve! You can store in an airtight container in the fridge for up to 5 days. Enjoy!:)

Notes

  • * I only had ground flax meal on hand, but whole flax seeds can be used! You can throw them in the sauce pan with the almonds to roast if you would like.
