Ingredients
1 cup frozen or fresh mango
1 cup rolled oats
1/2 cup unsweetened coconut flakes
1 tablespoon honey (2 dates or 1 tablespoon maple syrup can be substituted)
1/2 tablespoon fresh lemon juice * see notes
An additional 1/3 cup coconut flakes for rolling (optional)
Instructions
Cover either a large plate or baking sheet with parchment paper. Set aside.
In a food processor, place the mango, rolled oats, unsweetened coconut flakes, honey and lemon juice. Process until a dough a formed (see picture above).
Form the dough into tablespoon sized balls - you get about 12-14 balls. Place on the prepared sheet pan or plate with parchment paper.
If rolling in coconut flakes, pulse the additional 1/3 cup of coconut flakes in a small blender and place in a bowl. Dip the formed balls in the coconut flakes and put back onto the parchment paper.
Chill in the fridge for at least 15 minutes. They should be firm and ready to eat.
Serve chilled. You can store in an airtight container in the fridge for up to 4 days. Enjoy!:)
Notes
* I like a strong citrus flavor in these bliss balls, so I add 1 tablespoon of fresh lemon juice instead of a 1/2 tablespoon. So if you like citrus like I do, feel free to put some more lemon juice in!
