Ingredients

  • 1 cup frozen or fresh mango
  • 1 cup rolled oats
  • 1/2 cup unsweetened coconut flakes
  • 1 tablespoon honey (2 dates or 1 tablespoon maple syrup can be substituted)
  • 1/2 tablespoon fresh lemon juice * see notes
  • An additional 1/3 cup coconut flakes for rolling (optional)

Instructions

  • Cover either a large plate or baking sheet with parchment paper. Set aside.
  • In a food processor, place the mango, rolled oats, unsweetened coconut flakes, honey and lemon juice. Process until a dough a formed (see picture above).
  • Form the dough into tablespoon sized balls - you get about 12-14 balls. Place on the prepared sheet pan or plate with parchment paper.
  • If rolling in coconut flakes, pulse the additional 1/3 cup of coconut flakes in a small blender and place in a bowl. Dip the formed balls in the coconut flakes and put back onto the parchment paper.
  • Chill in the fridge for at least 15 minutes. They should be firm and ready to eat.
  • Serve chilled. You can store in an airtight container in the fridge for up to 4 days. Enjoy!:)

Notes

  • * I like a strong citrus flavor in these bliss balls, so I add 1 tablespoon of fresh lemon juice instead of a 1/2 tablespoon. So if you like citrus like I do, feel free to put some more lemon juice in!
