Mini Banana Pancakes for Babies

Ingredients
  

  • 1/2 banana
  • 1 egg
  • 1 tablespoon yogurt
  • 1 teaspoon maple syrup
  • 2 tablespoons whole wheat flour

Instructions
 

  • Heat a skillet over medium heat and lightly grease it. You can use olive oil or butter.
  • Mash the banana, then add the egg. Lightly beat the egg and banana together. Little chunks of banana are okay in this.
  • Add the yogurt and maple syrup and beat again until combined. Then add the flour and mix with a rubber spatula until all combined. Don't overmix!
  • Using a spoon or ice cream scooper, scoop about a tablespoon of pancake mix onto the skillet. Repeat this 5 more times. Cook the 6 mini pancakes for 2-3 minutes on each side, until brown on both sides.
  • Serve with yogurt, jam, peanut butter or by themselves. You can store in the fridge for 3-4 days or freeze for a couple months. Enjoy! :)
