Heat a skillet over medium heat and lightly grease it. You can use olive oil or butter.
Mash the banana, then add the egg. Lightly beat the egg and banana together. Little chunks of banana are okay in this.
Add the yogurt and maple syrup and beat again until combined. Then add the flour and mix with a rubber spatula until all combined. Don't overmix!
Using a spoon or ice cream scooper, scoop about a tablespoon of pancake mix onto the skillet. Repeat this 5 more times. Cook the 6 mini pancakes for 2-3 minutes on each side, until brown on both sides.
Serve with yogurt, jam, peanut butter or by themselves. You can store in the fridge for 3-4 days or freeze for a couple months. Enjoy! :)
