Line 2 backing sheets with parchment paper and set aside.
Melt the butterscotch chips: In a medium sized glass bowl, pour in the butterscotch chips. Pour in a cup or so of water into a medium sized saucepan. Place the bowl of butterscotch chips in the saucepan so that the saucepan is not touching the water. Turn the burner on over medium/high heat. Stir constantly with a rubber spatula until the chips have melted. Alternatively you can melt in a bowl in the microwave, stirring every 30 seconds until melted.
Throw in the chow mein noodles into the melted butterscotch chips and mix with a rubber spatula until combined
With two forks, pick up a tablespoon sized stack of the butterscotch coated noodles and place on baking sheet. You should get around 15.
Place two monster eyes in each haystack quickly before the chocolate starts the set.
Place in the fridge to chill for 10 minutes.
Store in an airtight container for up to 3 days. Enjoy!:)
