Monster Butterscotch Haystacks

Ingredients
  

  • 1 11 oz bag of butterscotch chips
  • 1 5 oz container of chow mein noodles
  • 1 container candy eyeballs

Instructions
 

  • Line 2 backing sheets with parchment paper and set aside.
  • Melt the butterscotch chips: In a medium sized glass bowl, pour in the butterscotch chips. Pour in a cup or so of water into a medium sized saucepan. Place the bowl of butterscotch chips in the saucepan so that the saucepan is not touching the water. Turn the burner on over medium/high heat. Stir constantly with a rubber spatula until the chips have melted. Alternatively you can melt in a bowl in the microwave, stirring every 30 seconds until melted.
  • Throw in the chow mein noodles into the melted butterscotch chips and mix with a rubber spatula until combined
  • With two forks, pick up a tablespoon sized stack of the butterscotch coated noodles and place on baking sheet. You should get around 15.
  • Place two monster eyes in each haystack quickly before the chocolate starts the set.
  • Place in the fridge to chill for 10 minutes.
  • Store in an airtight container for up to 3 days. Enjoy!:)
