Preheat your oven to 350 and line a baking sheet with parchment. Set aside.
In a food processor, or blender if you don’t have a food processor, combine all the ingredients above.
Pulse on high until you create a paste (it’s okay if there are little chunks of spinach in the paste). You will have to scape the sides of the processor once or twice, making sure all the ingredients are getting pulsed up.
Roll the rice mixture into 20 little balls and place on the parchment paper.
Place in the oven and bake for 15 minutes, just until the rice balls have firmed up slightly.
Enjoy warm or room temperature! You can keep in an airtight container for up to 3 days. Enjoy!:)
