Strawberry Bliss Balls

Ingredients
  

  • 1 cup fresh or frozen strawberries
  • 1 cup rolled oats
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup slivered or roughly chopped almonds
  • 3-4 dates pitted (1 tablespoon honey or maple syrup can be substituted)
  • An additional 1/3 cup coconut flakes for rolling (optional)

Instructions
 

  • Cover a large plate or small baking sheet with parchment paper and set aside. If rolling in the additional coconut flakes, pulse in a small blender or food processor and place them in a small bowl. Set aside
  • Combine all the ingredients in a food processor and process until smooth
  • Using wet hands, create 12 balls from the strawberry mixture and set on the prepared parchment paper. If you are rolling the balls into the pulsed coconut flakes, roll them into the coconut flakes before placing them on the parchment
  • Chill the bliss balls in the fridge for 15 minutes until firm
  • Serve! Store in an airtight container in the fridge for up to 3 days. Enjoy!:)
