Ingredients
4 large sweet potatoes peeled and cut into cubes
2/3 cup whole milk
1/4 cup butter plus 1 tablespoon butter
1/2 teaspoon ground cinnamon
1 teaspoon salt
Freshly cracked pepper to taste
1 tablespoon maple syrup
Instructions
Start a big pot of salted water on high heat until it begins to boil.
Drop in your sweet potatoes and leave on a high simmer for 12-15 minutes until tender and you can break the potato with a fork.
Drain the potatoes and place in a big bowl. Add in the milk, 1/4 cup butter, cinnamon, salt and pepper. Mash until smooth. You can also use an immersion blender if you prefer.
Top the mash with 1 tablespoon butter and maple syrup.
Serve warm! You can keep in an airtight container in the fridge for up to three days. Enjoy!:)
