Ingredients
1 sweet potato cut 1 1/2 into inch pieces
Optional Add ins- (1/2 teaspoon cinnamon or cardamom, 1/4 cup milk, 1 tablespoon butter)
Instructions
Cooking Method 1 - Cook in Water
Place the sweet potatoes in a small pot and fill with water until the water is just covering the sweet potatoes. Place the pot on a burner and bring the water to a boil. Let cook for 10-13 minutes, until you can pierce the sweet potato easily with a fork.
Cooking Method 2 - Steamer Basket
Fill a small pot with water until it just touches the steamer basket. Put the steamer basket to the side. Place the pot on a burner and bring the water to a boil. Once at a boil, put the steamer basket into the saucepan and place the sweet potatoes in the basket. Cover and let cook 25-30 minutes, until you can pierce the sweet potato easily with a fork.
Strain the sweet potatoes and place in a small food processor or baby food processor. Blend until smooth. (If you desire, this is also the time to add other ingredients like spices or milk).
You can store in airtight container in the fridge for up to 3 days. You can freeze for up to 3 months in an airtight container. Enjoy!:)
