In a medium sized saucepan over medium heat, brown your ground beef. While it’s browning, make sure you are breaking up any big pieces with your spatula.
While your beef is browning, make your hummus. In a food processor or blender, combine the beans, olive oil, lemon juice, water, garlic, cumin, salt and pepper. Blend until smooth. If the hummus is thick, add more water until you have a smooth texture. Set aside!
Once your beef is browned, drain the fat. Add in the tomato paste, water, oregano, garlic powder, onion powder, paprika, salt and pepper. Let is come to a simmer, then turn down to low and let the beef soak up the tomato sauce. This should take 5 minutes.
If you are serving out of one serving platter, scoop the hummus onto the platter, then drizzle some olive oil in the middle of the hummus, then sprinkle the ground beef over the top. If you are serving individual portions, you can scoop about 1/2 cup of hummus onto each plate, a small drizzle of olive oil, then top the hummus with a couple tablespoons of the ground beef. For littles, start with 1/4 cup of hummus, a touch of olive oil and a tablespoon of ground beef. Sprinkle fresh parsley on top if you would like!
You can store the ground beef and hummus separately in airtight containers for up to 3 days. Enjoy!:)
