These bunny biscuits are the perfect treat to make for Easter this year. They’re fluffy, sweet, bite sized and taste like a super soft biscuit. They’re also quick and easy to whip up!

These bunny biscuits are the perfect treat to make with and for your kids! Also fun to make to bring to a party. I like to make these for Easter, but you can create any animal shape to make what you want for anytime of the year. These fluffy biscuits once baked are dipped in some butter and topped with sugar to give it some more sweetness and crunch! Yogurt is the main ingredient in these which creates a nice fluffy texture. They’re so easy to transfer so my toddler and I made a bunch of these for our neighbors this year. I hope you love these as much as my family I do!

Ingredients

You will need Plain Whole Fat Greek Yogurt – this type of yogurt is encouraged for a fluffy texture, Unsalted Butter, Egg, Vanilla Extract, All Purpose Flour, Granulated Sugar, Baking Powder and Salt.

I used the bunny cookie cutter from this Montessori Kitchen Set, but any cookie or biscuit cutter will do!

For Littles

These are so fun to make for your littles because they are bite sized and absolutely delicious! I love to make these with my daughter. You can serve these to your littles 12 months +. I say this because it is not recommended to give sugar to babies under 12 months of age.

How To

Whisk together all the wet ingredients and then add in the dry.

Mix together until a shaggy ball of dough is created. On a lightly floured surface, knead until a soft ball of dough is formed.

Roll out and cut out shapes using the cookie cutters. Place on baking sheet and bake at 400 for 9-10 minutes.

Let cool and then dip in melted butter and sugar. Enjoy!:)

Ingredients
  

  • 1 cup plain whole fat Greek yogurt
  • 1/4 cup melted unsalted butter
  • 1 whole eggs
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • An additional 1/4 cup melted unsalted butter to coat
  • An additional 1/4 cup granulated sugar to coat

Instructions
 

  • Preheat your oven to 375 and set out a baking sheet with either parchment paper or a silicone baking mat. Set aside.
  • In a big bowl, combine your yogurt, butter, egg and vanilla extract. Whisk until combined.
  • Add in your flour, sugar, baking powder and salt. Mix with a rubber spatula or wooden spoon until a shaggy ball of dough is created.
  • On a lightly floured surface, knead the dough until smooth, this should take only a minute or two.
  • Re-flour your surface if necessary and roll out your dough about 1/4 inch thick. I like to roll out the dough in batches since there is a lot of it!
  • Using the bunny cookie cutter or cutter or your choice, cut out your shapes and place on your baking sheet. Bake for 9-10 minutes, until the bottoms are barely brown and the tops are set. You will be making 4-5 batches of these depending on the size of your cookie cutter! * see notes
  • Let cool. Then put your melted butter and sugar in two different bowl. Dip your biscuits into the butter first, and then dip the bunny into the bowl of sugar to coat. They are done!
  • You can store in an airtight container for up to 3 days. Enjoy!:)

Notes

  • * this dough makes plenty of biscuits depending on the size of your cutter! If you only want to use part of the dough, you can refrigerate the dough in plastic wrap for up to 2 days and make more biscuits then!
