I got this idea from TikTok when I saw a new mom making pancakes for her baby! She used a banana, and I thought it was such a smart way to add natural sweetness to pancakes. So I decided to create my own recipe for it!

These protein packed pancakes are a delicious way to ensure your baby gets good nutrients! The only sweetener I use in this is a little bit of maple syrup, otherwise all the sweetness comes from the banana.

What Makes My Recipe Different?

I add some yogurt for extra protein and creaminess, maple syrup for a little more depth of flavor and I use whole wheat flour! Whole wheat flour is my go-to flour when making food for my baby.

How To:

First take your banana and mash it with a fork. It’s ok if there are small chunks of banana. It’s good in the pancakes!

Add your egg, and lightly beat it with the mashed banana. Then add your yogurt and maple syrup, beat again until mostly combined.

Then add your flour and mix with a spatula, don’t over mix it!

Cook on a greased skillet over medium heat, until lightly browned on both sides.

Serve with some fruit and yogurt for your little one. This is how I served it to my baby!

Ingredients

  • 1/2 banana

  • 1 egg

  • 1 tablespoon yogurt

  • 1 teaspoon maple syrup

  • 2 tablespoons whole wheat flour

Directions

  • Heat a skillet over medium heat and lightly grease it. You can use olive oil or butter.
  • Mash the banana, then add the egg. Lightly beat the egg and banana together. Little chunks of banana are okay in this.
  • Add the yogurt and maple syrup and beat again until combined. Then add the flour and mix with a rubber spatula until all combined. Don’t overmix!
  • Using a spoon or ice cream scooper, scoop about a tablespoon of pancake mix onto the skillet. Repeat this 5 more times. Cook the 6 mini pancakes for 2-3 minutes on each side, until brown on both sides.
  • Serve with yogurt, jam, peanut butter or by themselves. You can store in the fridge for 3-4 days or freeze for a couple months. Enjoy! 🙂
