Twisted Chicken Noodle Soup

Homestyle chicken soup with a twist. Juice of 1/2 a lemon is the twist! It absolutely makes this soup delicious and bright. Lemons are so good for you, it gives the chicken noodle soup recipe even more nutritional value. My 11 month old daughter and I had the stomach flu this last week, and this soup helped us regain our strength back and strengthened our immune systems! This is the only thing our stomachs allowed us to eat all week.

For littles

This is a perfect meal for littles 7 months+! Just shred the chicken into smaller pieces if serving for the first time. The nutritional value for your little is incredible!

How to

Saute veggies in olive oil and then add spices.

Dump in broth and the chicken and let cook.

Take the chicken out and shred, put back into the soup with pasta noodles. Let cook until pasta is done and then squeeze your lemon into the soup.

Ingredients

  • 2 tablespoon olive oil

  • 2 large carrots chopped

  • 2 celery stalks chopped

  • 1 small yellow onion chopped

  • 1 teaspoon salt

  • 1 teaspoon dried parsley

  • 1/2 teaspoon oregano

  • 1/4 teaspoon dried thyme

  • 2 chicken thighs (you can use boneless or bone in)

  • 1 cup of your choice of pasta

  • Juice of half a lemon

Directions

  • Heat the olive oil in a large pot over medium heat. Once hot, dump the carrot, celery and onion. Saute for 5 minutes until veggies are soft.
  • Stir in the spices (salt, parsley oregano thyme and some freshly cracked pepper). Stir for 30 seconds.
  • Then pour the chicken broth into the pot followed by the chicken. Bring the pot to a boil turning the heat to high, then turn the heat back down to medium to let simmer for 15 minutes, until the chicken is done.
  • Take the chicken out, let cool for a couple minutes and shred. Put the chicken back into the soup along with the pasta. Let simmer for 15 minutes until the pasta is done!
  • Turn off the heat and add the lemon juice.
  • Pair with garlic toast, garlic bread, some oyster crackers or saltine crackers! You can store in the fridge for 4 days or freeze for up to three months. Enjoy! 🙂
