Slow Cooker Garlic Parmesan Chicken and Potatoes

Ingredients
  

  • 1 1/4 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 4 cups chopped Yukon gold potatoes, cut into 1/2 inch pieces
  • 4 garlic cloves minced
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese (plus more for serving)

Instructions
 

  • In the slow cooker, throw in the chicken, potatoes, minced garlic, oregano, garlic powder, onion powder, salt, black pepper, olive oil and chicken broth. Mix everything together with a wooden spoon until the chicken and potatoes are coated evenly. Cover and cook on low for 5 hours or on high for 3 hours.
  • Once done, top the chicken and potatoes with the Parmesan cheese and cover again for 2 minutes until the cheese melts.
  • You can serve with some roasted vegetables like broccoli or green beans. You can store in an airtight container for up to 3 days. Enjoy!:)
