4 Medium Sweet Potatoes, cut into bite-sized chunks
3 Garlic Cloves, Minced
1 Yellow Onion, diced
1 Jalapeno, diced
1 15 oz Can Fired Roasted Tomatoes
1 4 oz Can Green Chilis
1 Tablespoon Chili Powder
1 Teaspoon Cumin
1 Teaspoon Salt
Freshly Ground Cracked Pepper
1/2 Cup Freshly Grated Cheddar Cheese
2-3 Tablespoons of Olive Oil
1/4 cup Chopped Cilantro For Garnish (Optional)
Instructions
Heat a cast iron skillet over medium heat with 1 tablespoon of olive oil. Throw in your sweet potatoes once oil is hot. Saute for 6-8 minutes, until sweet potatoes are browned on all sides and a fork can break through- I also just eat a piece to make sure it is done! (You may need to add another tablespoon of olive oil if the sweet potatoes seem dry while cooking)
Set the sweet potatoes aside in a bowl. Throw in another tablespoon of olive oil, your onion and jalapeno and saute for 3-5 minutes until onions are translucent.
Throw in your ground beef and saute until almost all the beef is browned. Drain fat if there is a lot of it - leave some, it adds flavor! At this point you can add in all your spices - chili powder, cumin, salt and pepper.
Add your sweet potatos back in and stir.
Next, add in your cans of fire roasted tomatoes and green chilis. Bring it to a low simmer and leave on low for 2-3 minutes until thickened. You can throw on 1/2 cup of cheddar cheese and let melt.
Scoop into bowls, over rice or throw into a tortilla. Enjoy :)
