Sweet Potato and Ground Beef Skillet

Ingredients
  

  • 1 lb Ground Beef
  • 4 Medium Sweet Potatoes, cut into bite-sized chunks
  • 3 Garlic Cloves, Minced
  • 1 Yellow Onion, diced
  • 1 Jalapeno, diced
  • 1 15 oz Can Fired Roasted Tomatoes
  • 1 4 oz Can Green Chilis
  • 1 Tablespoon Chili Powder
  • 1 Teaspoon Cumin
  • 1 Teaspoon Salt
  • Freshly Ground Cracked Pepper
  • 1/2 Cup Freshly Grated Cheddar Cheese
  • 2-3 Tablespoons of Olive Oil
  • 1/4 cup Chopped Cilantro For Garnish (Optional)

Instructions
 

  • Heat a cast iron skillet over medium heat with 1 tablespoon of olive oil. Throw in your sweet potatoes once oil is hot. Saute for 6-8 minutes, until sweet potatoes are browned on all sides and a fork can break through- I also just eat a piece to make sure it is done! (You may need to add another tablespoon of olive oil if the sweet potatoes seem dry while cooking)
  • Set the sweet potatoes aside in a bowl. Throw in another tablespoon of olive oil, your onion and jalapeno and saute for 3-5 minutes until onions are translucent.
  • Throw in your ground beef and saute until almost all the beef is browned. Drain fat if there is a lot of it - leave some, it adds flavor! At this point you can add in all your spices - chili powder, cumin, salt and pepper.
  • Add your sweet potatos back in and stir.
  • Next, add in your cans of fire roasted tomatoes and green chilis. Bring it to a low simmer and leave on low for 2-3 minutes until thickened. You can throw on 1/2 cup of cheddar cheese and let melt.
  • Scoop into bowls, over rice or throw into a tortilla. Enjoy :)
