Sweet Potato and Ground Beef Skillet

I am a huge fan of one pan meals, especially for busy weeknights or when my baby is wanting my full attention! This is a quick, healthy and delicious meal. Sweet potatoes are incredible this time of year, so this recipe is part of my fall rotation. This recipe also serves as a pantry pull- the sweet potatoes, jalapenos, cilantro and ground beef are the only items you would need to buy, assuming you have the rest of the ingredients in your pantry.

The flavors in this are grand… rich, spicy, cheesy and satisfying.

Once the sweet potatoes are done, you just put them to the side and create the rest of the dish! Then you put them back in when you throw in the fire roasted tomatoes and green chilis.

Throw on some freshly shredded cheddar cheese – I eat it right out of the cast iron skillet! Scrumptious stuff right here.

How to Eat:

Eat it right out of a bowl! I top mine with some fresh cilantro, sour cream and guacamole.

Eat it over rice.

My husband throw it in a tortilla and makes it a burrito.

Ingredients

  • 1 lb Ground Beef

  • 4 Medium Sweet Potatoes

  • 3 Garlic Cloves, Minced

  • 1 Yellow Onion, diced

  • 1 Jalapeno, diced

  • 1 15 oz Can Fired Roasted Tomatoes

  • 1 4 oz Can Green Chilis

  • 1 Tablespoon Chili Powder

  • 1 Teaspoon Cumin

  • 1 Teaspoon Salt

  • Freshly Ground Cracked Pepper

  • 1/2 Cup Freshly Grated Cheddar Cheese

  • 2-3 Tablespoons of Olive Oil

  • 1/4 cup Chopped Cilantro For Garnish (Optional)

Directions

  • Heat a cast iron skillet over medium heat with 1 tablespoon of olive oil. Throw in your sweet potatoes once oil is hot. Saute for 6-8 minutes, until sweet potatoes are browned on all sides and a fork can break through- I also just eat a piece to make sure it is done! (You may need to add another tablespoon of olive oil if the sweet potatoes seem dry while cooking)
  • Set the sweet potatoes aside in a bowl. Throw in another tablespoon of olive oil, your onion and jalapeno and saute for 3-5 minutes until onions are translucent.
  • Throw in your ground beef and saute until almost all the beef is browned. Drain fat if there is a lot of it – leave some, it adds flavor!
    At this point you can add in all your spices – chili powder, cumin, salt and pepper.
  • Add your sweet potatos back in and stir.
  • Next, add in your cans of fire roasted tomatoes and green chilis. Bring it to a low simmer and leave on low for 2-3 minutes until thickened. You can throw on you 1/2 cup of cheddar cheese and let melt.
  • Scoop into bowls, or over rice or throw into a tortilla. Enjoy šŸ™‚
