Pumpkin Peanut Butter Balls

These no-bake bites of joy are a healthy sweet snack to make this fall. These balls are packed with fall flavor, are gluten-free and are incredibly easy to whip up. They’re toddler and kid friendly!

These cute little pumpkin peanut butter balls are a fun festive snack to make this time of year (although I make them all year long because they’re so delicious). They’re not only sweet and delicious, but they’re a healthy sweet treat! They’re full of fiber, protein and healthy fats. They’re also a great energy bite! The chocolate chips add a good sweetness and I love to add some on top to make the balls look like pumpkins.

All you have to do is combine canned pumpkin, peanut butter and maple syrup. Then add in the instant oats and pumpkin pie spice and mix together. Add in the mini chocolate chips and then chill for 20 minutes in the fridge. Form into balls and then chill for another 15 minutes. Add your chocolate chips on top to make look like pumpkins if desired!

I love to make these for snacks, but also love to have them on hand for dessert. They’re portable and freezer-friendly. I hope you love this recipe as much as my family and I do!

Ingredients

You will need Canned Pumpkin – fresh also works, Peanut Butter – almond butter also works, Maple Syrup – honey can be substituted, but maple syrup is preferred, Instant Oats – I like these for a little bit of texture in these balls, but you can use oat or almond flour if you prefer, Pumpkin Pie Spice – you can use cinnamon too, and Mini Chocolate Chips.

For Littles

This is a delicious and healthy snack to make for your littles. My toddler would easily eat 10 of these if she could, and I love how nutritious they are! They’re loaded with fiber, protein and healthy fats which are vital for our growing little ones. You can serve this to your littles 12 months +!

How To

Combine the wet ingredients and then add in the dry. Mix in the chocolate chips and chill in the fridge for 20 minutes.

Roll into 15-16 tablespoon-sized balls and chill for another 15 minutes. Add on more chocolate chips on top to make them look like pumpkins if desired. Enjoy!:)

Ingredients
  

  • 1/2 cup pumpkin puree (canned or fresh both work)
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 3/4 cup instant oats
  • 1/2 teaspoon pumpkin pie spice
  • 1/3 cup mini chocolate chips (plus more for decorating)

Instructions
 

  • Place a piece of parchment paper on top of a large plate and set aside.
  • In a big bowl, combine the pumpkin, peanut butter and maple syrup until smooth. Then add in the instant oats and pumpkin pie spice and mix until evenly incorporated. Then mix in the mini chocolate chips.
  • Put plastic wrap over the bowl and chill the pumpkin mixture for 20 minutes.
  • Then roll into 15-16 tablespoon-sized balls and place on the large plate covered with parchment paper. You can add 3 mini chocolate chips onto each ball to make them look like pumpkins if you desire!
  • Chill in the fridge for another 15 minutes. Serve cold! You can store in an airtight container for up to 3 days. Enjoy!:)
