Spinach Rice Balls

These spinach rice balls are a great way to combine spinach and rice to make a delicious snack. These are healthy, nutritious and easy to make! They’re toddler and kid friendly.

If you have leftover rice hanging around in your fridge, this is a great way to use it! This recipe is also incredibly nutritious, serving as a healthy snack or lunch addition.

The spinach is really the hero in this recipe, making this recipe a great healthy bite. This recipe is one of my daughter’s favorite snacks (she will eat 5 or 6 balls in one sitting), and I love it as food to pack while on the go. I hope you and your family love this recipe as much as my toddler and I do!

Ingredients

Cooked White Rice – this can be leftover rice or fresh rice that has been cooled

Fresh Spinach – adds nutrients and gives it a beautiful color

Parmesan Cheese – gives it flavor

Olive Oil

Lemon Juice – adds a brightness to the flavor

Onion Powder

Garlic Powder

Salt

Pepper

This a healthy and delicious snack to serve to your little ones! These rice balls are iron-rich, boost energy and contain antioxidants. They have tons of flavor as well as being incredibly fun and easy to eat. You can serve these to your littles 7 months +!

How To

Preheat your oven to 350 and blend all the ingredients in a food processor until combined.

Roll into 20 balls and place on parchment paper. Bake for 15 minutes. Serve!

Ingredients
  

  • 2-2 1/2 cups cooked white rice
  • 2 cups spinach
  • 1/4 cup Parmesan cheese
  • 1 tablespoon olive oil
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Freshly cracked black pepper

Instructions
 

  • Preheat your oven to 350 and line a baking sheet with parchment. Set aside.
  • In a food processor, or blender if you don’t have a food processor, combine all the ingredients above.
  • Pulse on high until you create a paste (it’s okay if there are little chunks of spinach in the paste). You will have to scape the sides of the processor once or twice, making sure all the ingredients are getting pulsed up.
  • Roll the rice mixture into 20 little balls and place on the parchment paper. They will be sticky, wet your hands with water in between rolling the balls if needed.
  • Place in the oven and bake for 15 minutes, just until the rice balls have firmed up slightly.
  • Enjoy warm or room temperature! You can keep in an airtight container for up to 3 days. Enjoy!:)
