Easy Greek Yogurt Mac and Cheese

This Greek yogurt mac and cheese is tasty and creamy and also provides a dose of protein and probiotics! It’s incredibly satisfying to eat, easy to make, and is toddler and kid friendly.

I made this recipe for my toddler specifically in hopes that I could get some more yogurt into her diet. It came out even better than I thought it would! The Greek yogurt makes it creamy and rich but there’s no yogurt taste. It’s a healthy twist on a nostalgic kid meal. My toddler is a fan and I feel good serving it to her.

Because this recipe is so easy to whip up, I try to make sure to keep all the ingredients on hand so that I can make it any time for a quick lunch or dinner. I hope you love this recipe as much as my toddler and I do!

Ingredients

Dry Elbow Pasta – you can also use shells or any kind of pasta shape you like

Plain Whole Fat Greek Yogurt – the Greek yogurt specifically is what makes it so creamy and rich. I have not tried other yogurt but would probably not recommend it

Shredded Cheese of Choice – freshly shredded cheese works best but I have used pre shredded in a pinch and it came out fine

Pasta Water – save some when boiling your pasta noodles

Garlic Powder – a little goes a long way

Salt & Pepper – to taste!

For Littles

This recipe I make at least once a week for a quick lunch or dinner. I always have the ingredients on hand and it’s a healthy twist on something kids love to eat. You can serve this to your littles 9 months old+!

How To

Make your pasta and reserve your pasta water. Drain the pasta in a strainer and set aside. Turn off the heat on the stove, but using the same pot, throw in the yogurt, cheese and pasta water. Mix together and then add the garlic powder, salt and pepper. Throw your cooked pasta back in that same pot, stir and serve!

Ingredients
  

  • 1 cup dry elbow pasta
  • 1/2 cup Greek yogurt
  • 1 cup shredded cheese of choice (I love white cheddar)
  • 1/4 cup pasta water
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions
 

  • Cook your pasta according to package directions in a nicely salted pot of water and reserve your pasta water
  • Drain your pasta and set aside. Turn off the heat and in that same pot, stir together the yogurt, cheese and pasta water until combined. Add in your garlic powder, a pinch of salt and pepper and stir one more time (if you cooked your pasta in salted water, you may not need much more salt in it)
  • Add back in the cooked pasta, stir, add more salt and pepper if needed and stir again!
  • Serve! You can top it with Parmesan cheese or more pepper. You can store in the fridge for up to 3 days. Enjoy!:)
