Ground Pork Tacos With Cabbage Slaw

There is nothing I love more than tacos and these ground pork tacos are one of my go-to recipes for a quick Taco Tuesday dinner. I use this recipe for when I want a delicious taco but don’t have all day to slow cook meat. Not only does the spice mixture for the ground pork add a nice spice and flavor, but the slaw adds tang and texture. I am obsessed with adding other toppings to the tacos…there is nothing wrong with too many toppings! My mouth is watering just thinking about it.

Ingredients:

1 lb of Ground Pork, 1 1/2 Teaspoons of Chili Powder, 1 Teaspoon of Cumin, 1 Teaspoon of Garlic Powder, 1 Teaspoon of Brown Sugar, 1 Teaspoon of Salt, Freshly Ground Cracked Pepper, 1/4 Cup of Water, 8-10 Corn Tortillas, 2 Cups of Thinly Sliced Red Cabbage, 2 Tablespoons of Roughly Chopped Cilantro, Juice of Half a Lime, 1/2 Tablespoon of Olive Oil and a Pinch of Sea Salt.

Directions:

First, cook the ground pork over medium heat until brown. Drain the fat and add chili powder, cumin, garlic powder, brown sugar, salt, black pepper and 1/4 cup of water. Turn the heat to low and let simmer for 5 minutes.

While the meat is cooking, take your thinly sliced cabbage and toss with the cilantro, lime and olive oil. Sprinkle some sea salt and toss again.

Now it’s time to build your tacos! I like to add some mashed avocado on the bottom of the warm tortilla, followed by a spoonful of pork, drizzled with some thinned out sour cream and topped with the cabbage slaw.

Tips:

Add whatever toppings you love, that’s what will really elevate these tacos. Examples of toppings could be pico de gallo, salsa, hot sauce, avocado (what I use in these tacos), sour cream (also what I use in these tacos), red onion or cheese.

If using sour cream, I like my sour cream thinned out before drizzling on the tacos. You can thin the sour cream out with a splash of milk, water or a squeeze of lime. Recipe- 1/4 cup of Sour cream, 1 teaspoon of either milk, water or lime. Mix together and drizzle on the tacos.

  • 1 Ripe Avocado (Optional)

  • 1/4 Cup of Sour Cream (Optional)

Directions

  • While the meat is cooking, take your thinly sliced cabbage and toss with the cilantro, lime and olive oil. Sprinkle some sea salt and toss again.
  • (Optional), Mash the avocado with a fork in a bowl and add a sprinkle of sea salt.
  • (Optional), Add a teaspoon of lime juice, water or milk to a 1/4 cup of sour cream and mix until combined,
  • Warm the corn tortillas in the microwave for 45 seconds with paper towels between each tortilla, or warm up on the stove over medium heat, flipping the tortilla after 45 seconds on each side.
  • Build your tacos: Spread some avocado to the bottom of a corn tortilla (about a 1/2 tablespoon), followed by a spoonful of pork, drizzle with some thinned out sour cream and top with the cabbage slaw.
