Healthy Apple Mini Muffins

These healthy mini apple muffins are the perfect bite of fall. They are sweet, full of apple flavor, and great for a bite-sized snack! They’re refined sugar-free and full of fiber. They’re toddler and kid friendly!

I love making mini muffins because they are the perfect bite-sized snack. These mini apple muffins taste and smell just like fall! I created these with my toddler in mind, but I eat them just as much as she does because of how delicious they are.

They’re perfect for on-the-go snacks and are easily portable. They’re also freezer-friendly. I hope you love this recipe as much as my toddler and I do!

Ingredients

Whole Wheat Flour – you can substitute with all purpose flour

Cinnamon – ground cinnamon adds warm fall flavor

Baking Soda

Baking Powder

Salt

Apple of Your Choice – I have used both honey crisp and cosmic for these

Coconut Oil – butter can also be substituted

Maple Syrup – adds sweetness

Yogurt – I use plain whole fat Greek yogurt

Whole Egg

Vanilla Extract

This is the silicone mini muffin pan I use – Silicone mini muffin pan.

For Littles

This is a great recipe to make for your littles because these muffins are refined sugar-free and are made with whole wheat flour. And apples are not only delicious, but they’re full of fiber and essential vitamins. These muffins also contain protein! You can serve these to your littles 9 months +!

How To

Combine your dry ingredients together and set aside. While you sauté your apples, combine the wet ingredients in a large bowl and then mix in your cooked apples.

Then mix in your dry ingredients. Scoop into a mini muffin pan and bake.

Ingredients
  

  • 1 cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 apple diced
  • 1/4 cup + 1 teaspoon coconut oil melted
  • 1/3 cup+ 1 tablespoon maple syrup
  • 1/2 cup plain whole fat Greek yogurt
  • 1 whole egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350 and grease your mini muffin pan. Set aside!
  • Combine the flour, cinnamon, baking soda, baking powder and salt in a small bowl and set aside.
  • Warm up a small saucepan over medium heat. Melt the 1 teaspoon of coconut oil. Once the pan is hot, add in the diced apples. Let cook, stirring occasionally for 4 minutes. Then add in the 1 tablespoon of maple syrup and stir. Let sit for 1 minute and then remove from the heat. Set aside.
  • In a big bowl, combine the rest of the 1/4 cup of melted coconut oil, 1/3 cup maple syrup, yogurt, egg and vanilla extract. Whisk until combined. Then add in your apples and stir with a wooden spoon.
  • Add the bowl of the dry ingredients into the wet mixture and stir with a wooden spoon until there is no more flour showing. Don’t overmix!
  • Scoop evenly into a 24-cup mini muffin pan and bake at 350 for 15 minutes. Let cool for 5 minutes and then pop the muffins out of the muffin pan.
  • Serve! You can store in an airtight container for up to 3 days or freezer for up to 3 months. Enjoy!:)
