My 10-month-old daughter at the time (she’s 11 months as I’m typing this) had just started eating a third meal a day. So, I knew I had an extra meal to incorporate more veggies into her diet. And let’s be honest, it’s way more satisfying to eat veggies when they’re turned into something fun. This is when the broccoli fritters came to be! One thing I love about this recipe is it’s not hard to make and it’s quick. You’ll also most likely have everything you need in your fridge or pantry.

Also, it’s incredibly healthy. Your baby gets their protein & their veggie!

How To

Steam your broccoli, mash and mix. Form into pucks and cook over medium heat.

My daughter loves them with yogurt – she will dip them in. So yummy!

Broccoli Fritters

Ingredients

  • 1 head of broccoli

  • 1/2 cup bread (torn into pieces)

  • 1/3 cup parmesan cheese

  • 1 egg

  • 1/2 teaspoon salt

  • Fresh Cracked Pepper

Directions

  • You will want to cook a head of broccoli in boiling water for a couple minutes until the broccoli is tender
  • You’ll then transfer the broccoli to a pan where you can mash the broccoli! Use a fork to mash the broccoli until there are no big pieces of broccoli anymore.
  • Crack an egg on top, add the Parmesan cheese, fresh bread* (see notes) pieces, salt & pepper. Mix until combined.
  • Heat up a skillet over medium heat and brush the pan with olive oil.
    Form the mix into pucks and place them on the skillet. You can create anywhere from 6-8 fritters depending on the size you make. Cook them until brown on both sides.
  • Serve them warm with some yogurt! You can store in an airtight container for up to 3 days. Enjoy!:)

Notes

  • I love sourdough bread for the bread pieces – however if you don’t have fresh bread, you can substitute bread crumbs.
